Wheat Berry Salad
Ingredients:
1 cup cooked wheat berries*
1 dozen yellow and/or red cherry tomatoes, halved
1 dozen Kalamata olives, pitted and halved
2 ears of corn, cleaned
Vinaigrette to lightly coat
Fresh mozzarella (we used mozzarella "pearls" from Whole Foods)
Fresh basil, julienned
Cut corn from cob. Combine wheat berries, cherry tomatoes, olives, and raw corn. Toss with vinaigrette, add mozzarella, and basil. Serve immediately. 4 servings.
