Sweet Potatoes and Carrots
This was taken from Spur of the Moment Cook by Perla Meyers (William and Morrow Co.).
Ingredients:
3 medium sweet potatoes, peeled and cut into 1 inch pieces
5 large carrots, peeled and cut into 1 inch pieces
3 TBS sour cream
2-4 TBS butter
1-2 TBS dark brown sugar (to taste)
Salt and freshly ground pepper to taste
Combine the potatoes and carrots in a large saucepan, add salted water to cover and simmer until very tender. Drain the potatoes and carrots well and pass through a food mill (or mix until completely smooth with an electric mixer). Add the sour cream, butter and sugar and combine. Season and serve hot. 4 servings.
