Smoked Trout Spread on Cucumber Slices



Ingredients:

1 cup smoked trout, coarsely chopped
1/3 cup cream cheese, room temperature
2 TBS heavy cream
2 tsp lemon juice
2 tsp fresh dill, finely chopped
1 tsp lemon zest
2 tsp horseradish
Freshly ground pepper to taste
1 English cucumber, cut into slices 1/4 inch thick
Fresh dill for garnish

Combine smoked trout, cream cheese, cream, lemon juice, dill, lemon zest, horseradish, and pepper in medium bowl until blended. Refrigerate until the mixture reaches spreading consistency. When ready to serve, place one teaspoon of trout mixture on each cucumber slice and garnish with fresh dill. Makes 48 appetizers.

Make ahead tip: Trout mixture can be prepared up to two days in advance; appetizers can be assembled up to one hour in advance, and refrigerated.
