Roasted Butternut Squash



Ingredients:

2 lbs butternut squash, peeled, seeded, and cut into 1 inch cubes
2 TBS olive oil
Salt and freshly ground pepper to taste

Preheat oven to 425 degrees. Adjust oven rack to lower-middle position. In large bowl, toss the squash with the oil, salt, and pepper, and spread the squash pieces on a rimmed baking sheet in a single layer (do not crowd). Roast, shaking the pan every 10-15 minutes, until squash is tender and browned (about 30-40 minutes). Adjust seasoning, and serve immediately. 4 servings.
