Red Cabbage And Chicory Salad


2 cups shredded red cabbage
2 cups shredded chicory (or escarole)
1/2 green pepper, finely diced

Dressing Ingredients:

2 TBS red wine vinegar
2-3 tsp Dijon mustard
1/2 tsp mustard seed
Salt and freshly ground pepper to taste
4 TBS olive oil

Mix shredded cabbage and chicory in large bowl with green pepper. In small bowl, combine vinegar, mustard, mustard seed, salt and pepper. Slowly whisk in oil. Pour dressing over salad and toss. 4 servings.
