Puerco Pibil (Conchinita Pibil)
This dish was one of the stars in "Once Upon a Time in Mexico" which had multiple walk-on scenes. It is slow roasted to allow all of the flavors to blend and the meat to become fall apart tender. It is one of our must fix recipes!
Grind the following:
5 TBS annatto seeds*
2 tsp cumin seeds
1 tsp black pepper
8 allspice seeds
1/2 tsp cloves
Add the Following:
2 seeded habanero peppers, diced
1/2 cup OJ
1/2 cup white vinegar
1 tsp salt
8 cloves garlic
Juice from 5 lemons (1 Cup)
Splash of tequila
5 lbs pork butt cut into 2" squares
Put pork into a gallon ziploc. Pour the sauce over the meat and marinate several hours (over night is best). Pour pork and marinade into pot and cover with aluminum foil and a lid. Bake 4 hours at 325 degrees. Serve over a bed of rice and top with tomato or use the mixture to make burritos.
* Ground annatto (achiote) seeds were used by the Indians for body paint. Since they have no flavor, they are used today to color foods.
