Prosciutto, Brie, and Apple Panini



Ingredients:

4 TBS plus 2 tsp unsalted butter, softened
1 scallion, finely chopped
1/2 tsp fresh lemon juice
1/4 tsp Dijon mustard
8 slices country-style bread, each 1/2 inch thick
3/4 lb prosciutto, thinly sliced
1/2 lb Brie, rind removed, cheese cut into 4 pieces
1 Granny Smith apple, peeled and thinly sliced

In bowl, beat 4 TBS of butter until creamy. Stir in scallion, lemon juice and mustard until smooth. Preheat griddle or panini maker. Spread butter on one side of bread. Lay the prosciutto on bread; top with Brie and apple slices and close sandwiches. Lightly spread remaining 2 teaspoons of butter on outside of bread. Put sandwiches in panini maker, or on griddle. Cook until toasted and Brie melts. Transfer to cutting board; cut in half, and serve. 4 servings.
