Hemp Kale Salad*



Ingredients:

1 bunch Dinosaur/Lacinato kale
1 large tomato, diced (or equivalent halved cherry tomatoes)
1/4 cup hemp nuts (can be found at health food stores)
2 tsp lemon juice
3 TBS olive oil
Sea salt to taste

Wash kale; remove large middle stem, and finely chop leaves into a large bowl. Add a small amount of sea salt and massage until kale wilts. Add lemon juice and massage again. Add tomato and hemp nuts, and mix. Finally add olive oil, and toss. The order in which you add the ingredients is crucial. If you add the oil too early, the kale will not wilt properly. 2 servings.

*We have used toasted sesame seed in place of hemp nuts. Since the raw kale will leave your hands a pale shade of green, consider using food prep gloves for this recipe.
