Japanese-style Cucumber and Radish Salad



Ingredients:

1/2 cup thinly sliced sweet onion*
8 radishes, thinly sliced
1 English cucumber, peeled, halved lengthwise, and thinly sliced
1/4 cup rice wine vinegar
2 tsp vegetable oil
1 tsp dark sesame oil
Salt to taste
1/8 tsp crushed red pepper flakes
1 tsp sesame seeds, toasted - garnish

Combine onion, radishes, and English cucumber in a medium bowl.

Combine vinegar and remaining ingredients (except sesame seeds) in a small bowl; stir until blended. Drizzle vinegar mixture over cucumber mixture, tossing to coat. Cover with plastic wrap, and chill 15 minutes. Sprinkle with sesame seeds before serving. 6 servings.

*Since we don’t care for the taste of raw onions, we eliminate them, or sauté in a small amount of oil until softened, and then proceed with the recipe.
