Creamy Blue Cheese Dressing

Ingredients:

1/4 blue cheese (Clemson Blue, if available)
1 TBS red wine vinegar
1 TBS Dijon mustard
1/2 cup sour cream
2 TBS whipping cream
Freshly ground pepper

Mash the cheese with the vinegar and mustard. Slowly beat in the sour cream and cream. Season to taste and serve over mixed greens. Makes 1 cup.
