Cold Zucchini Soup


  • 3 medium zucchini, sliced
  • 1 green pepper, chopped
  • 1/2 cup onion, chopped
  • 3 cups chicken stock
  • 1 cup sour cream (or yogurt*)
  • 1 TBS parsley, finely chopped (Optional)
  • 1 tsp fresh dill, finely chopped (Optional)
  • Salt and pepper to taste

Place zucchini, green pepper, onion and chicken stock in saucepan. Simmer covered for 20 minutes or until vegetables are soft. Process with stick blender until smooth. Add sour cream (or yogurt, or a combination of both), mix well and chill. Serve garnished with sour cream and dill. Makes 4 servings.

*Non-fat plain yogurt can be substituted if drained for 3 hours prior to incorporating with other ingredients.
