Savory Cantaloupe Salad
Ingredients:
One 2-3 lb ripe cantaloupe, cut into 1 inch cubes
Salt and freshly ground black pepper to taste
2 tsp extra-virgin olive oil
2 tsp wine vinegar
2 oz sopressata salami, cut into thin strips
Put the melon cubes in a serving bowl and season with salt and pepper. Add the oil and vinegar and toss gently. Add sliced salami, toss again and serve. 4 servings.
