Welcome to Seasonal Cooking! This semimonthly column will feature recipes using local ingredients, with an initial look at produce from the area tailgate markets. Our first visit of the season to the Polk County market in Columbus on Saturday morning (8-11:30 am in front of the Courthouse) turned up some beautiful strawberries, lettuce, kale, collards, and radishes, along with numerous plants, crafts, and baked goods. In the future, we will make it a point to arrive earlier since we were just in time to purchase the last basket of strawberries.

On a trip to the Hendersonville tailgate (Saturdays from 7am-12pm on King between 1st and 2nd Avenues), we found that asparagus is also in season in western North Carolina. Our purchases are reflected in today's column; recipes for a beautiful tart featuring asparagus, an interesting, but quick salad of avocados and strawberries, and our favorite strawberry sorbet. While not a true sorbet, due the addition of cream, this sorbet will keep for months - long past strawberry season, which is much too short! Please contact us with suggestions for topics.
