Soup, glorious soup



Very few things are as comforting as a bowl of soup on a cold day. We all take advantage of the convenience of canned soups, but when time permits, nothing compares to the homemade product; and it makes a very healthful meal. Today's column offers three options including an Eating Well recipe for collard and black-eyed pea soup that provides a nice change from the traditional New Year's pot of greens with accompanying peas. The intensely flavored tomato soup from Cooks Illustrated is what we always thought tomato soup should taste like, but never did. A good friend would say that this recipe is begging to be accompanied by a grilled cheese sandwich. Finally, the black bean soup recipe was developed out of necessity one day, and to be honest, we always substitute canned beans for the dried variety. Happy Holidays and good health in 2009!
