Preparing some meatless meals
For many years, vegetarians and vegans have frequently found themselves without many options at summer grilling events that frequently focus on burgers, hot dogs, and steaks. While portobello mushrooms have long been a stand-in for burgers, more and more options for those who don't eat meat are appearing in cookbooks and on web sites. Although we are not vegetarians, we frequently enjoy meat-less meals, and we've recently been trying out some new "burger" substitutes. In addition to the mushroom and goat cheese sandwich from Weber's Art of the Grill (1999), we are also including a chickpea burger with tahini sauce, and a brown rice and goat cheese burger, both from the EatingWell web site. In all cases, our experiments have led us to change the recipes to suit our personal tastes. If you give some of these recipes a try, we hope you will also alter them to reflect your preferences, along with those of family and friends.
