Healthful, not healthy
Your house, like ours, probably filled up with some wonderful gifts of food over the holidays. There was the beautiful handmade baklava from the kitchen of a dear Greek friend; the gooey butter cake - a St. Louis specialty; chocolate truffles, and so much more. In thinking about some healthier options as we move into 2008, we recalled this little entry from the 2007 list of "banned words": Someone told Joy Wiltzius of Fort Collins, Colorado, that the tuna steak she had for lunch "sounded healthy." Her reply: "If my lunch were healthy, it would still be swimming somewhere. Grilled and nestled in salad greens, it's 'healthful.'"
So, with healthful, not healthy, food in mind, we would like to share a couple of favorite recipes for fish, both of which can be easily doubled, and also introduce wheat berries to the column. They will appear again during the year in a variety of recipes. Wheat berries can be bought in bulk at natural food stores and some grocery stores. The most important thing we learned about them recently is that you can cook a large batch, and freeze them for future use. We wish each of you good health in 2008.
