"Green" Recipes



As we enjoy more and more local produce, we would like to find out if any growers in our area are participating in the "Community Farm" concept. Briefly, Community Supported Agriculture, or CSA, is a way of bringing together farms and members of the community to share in a mutually beneficial relationship.

At the beginning of the season, members purchase a share, thus providing farmers with money to buy seeds and supplies, and in return, the farmer receives a guaranteed customer base throughout the growing season. Members, as shareholders, receive produce weekly, and get the satisfaction of enjoying fresh, local, quality produce from a farmer they know.

This column appears to be focused on "green" recipes. The chicken, a recipe we developed a number of years ago, is a wonderful entrée. It also makes great sandwiches, especially with a slice of heirloom tomato. The pesto recipe is the perfect way to keep some of the beautiful basil you are growing (or perhaps purchasing from Mary and Joe at Giardini) for future use. It can be used with pasta, pizza, as part of a sandwich, or in any recipe of your choice.

Finally, the zucchini bread recipe provides a fabulous way to use some of the zucchini that is so prevalent at this time of year. We were fortunate to convince Willie Benau, owner of Victorian Inn on the Park in San Francisco, to share this recipe with us.
