Garden party brunch
The first member-only event for The Foothills Village, a garden party brunch hosted by Betsy and Don Freeman, was the perfect opportunity to share several dishes prepared and served by some of our volunteers. Pat Fuller put together a fabulous assortment of seasonal fruit; Chris Cheseldine and Lynnea Stadelmann each baked one of their favorite special bread recipes, and Terry Catalano provided this tasty quiche, that goes together quickly since it does not require a crust.
The dishes from our kitchen that were enjoyed poolside at the Freeman's included a breakfast strata from Cook's Illustrated, and a chicken salad recipe that we persuaded a reluctant food provider in Charleston to share with us a number of years ago. The strata is included today, and the chicken salad will make an appearance in a future column. The strata is a great make-ahead recipe that can be refrigerated overnight, and baked prior to serving.
