A dinner with fresh salmon
We know that spring is at least a possibility when we see the containers of daffodils in front of Cowan's (and we always brake for daffodils). That also means that the tailgates will be opening soon, so we begin to think about foods that we equate with spring. Our list of favorites at this time of year includes asparagus, artichokes, strawberries, greens of all kinds, and much more. We've found some beautiful fresh artichokes in the stores recently, along with some strawberries from Florida that we will enjoy while we wait for the local crop to make an appearance. Salmon is also very popular at our house, and we've been exploring different ways to prepare it. We've included one of them today, salmon burgers. With the help of a food processor, they are easy to put together, and cook quickly. The artichokes are delicious, and they are almost as good the second day as when first cooked. The parfaits, from Eating Well, provide a lovely end to a springtime meal.
