Fall color for your plate
The beautiful fall weather has brought numerous favorite recipes to mind that are perfect for this time of year. Pork tenderloin is easy to pair with almost any vegetable, and many fruits. It is particularly attractive when coated with ground coriander, and served over a thick puree of carrots and ginger along with perfectly braised leeks. The leeks, and the carrot puree can be made a day ahead, and, since the tenderloin cooks very quickly, this is a great meal for company.
If you want to complete the meal with some homemade rolls, the recipe included is also very simple. It is from an out-of-print Betty Crocker cookbook that we had an opportunity to pass along as a gift to a stranger. While in a used cookbook store, a woman was trying to locate a copy of that particular book as a gift for her daughter. For some reason, the only recipe we ever made from the cookbook was this one for dinner rolls. So we offered to mail her the book to share with her daughter, and in return, we received a copy of a cookbook that she particularly enjoyed. It was a great swap.
