Everything in better with bacon
As we start another year, and head into winter, eating a more healthful diet sometimes loses out in favor of comfort food. Little is more comforting than the smell of bacon slowly cooking. While we all know that bacon isn't something we should eat frequently, it's difficult to pass up a perfectly cooked piece of crisp bacon. Many years ago, one of our children designated bacon as a separate food group with healing powers; and she still holds to that belief.
Once we realized that in addition to cookbooks whose sole focus is bacon, there are bacon-of-the-month clubs, it seemed only appropriate to share a few of our favorite recipes using this particular comfort food. Most people are partial to a particular brand of bacon, but occasionally it's fun to try something new. We've found that in addition to our "regular" brand used at breakfast, we prefer to use Nueske's apple smoked bacon in most recipes calling for bacon. If you like the taste of bacon, but prefer to eliminate some of the fat, they also make a wonderful Canadian bacon. In our area, both are available at Fresh Market, or via mail order. We won't pretend that this column is all about good health, but it certainly offers some great taste options.
