End of Summer Meal
Even though we know summer is coming to an end, there is still a lot of wonderful produce at the tailgate markets. We are anticipating the arrival of more varieties of kale, Swiss chard, butternut squash, and other things that make us think of fall. Those, along with apples, root vegetables, and whole grains will be the focus of some upcoming columns. This week, we've put together a dinner that includes marinated lamb chops, a gratin of two potatoes with a horseradish crumb crust, and grilled cherry tomatoes with a balsamic glaze. Cherry tomatoes are still plentiful at the markets, and this recipe is an easy, but colorful, side dish. If possible, purchase tomatoes still on the vine. A dessert featuring local apples is a perfect finish to the meal.
