Cold Weather Kale



Weather for the opening of the tailgate market was certainly unseasonably cold, and we are all concerned about the effects of the frigid temperatures on the fruit crops across our area, and the farmers who grow those crops. We hope the growing season from this point on will be less stressful.

One of the few crops that doesn't mind cold weather, or even some frost, is kale. Interestingly, Pizza Hut is the largest consumer of kale in this country, and uses it to decorate their salad bars. Additionally, there are towns in Germany that hold annual "kale tours" that include visiting local inns to consume large quantities of kale, sausage, and schnapps. Perhaps kale will never reach that level of popularity in our area, but enjoy this healthy green because it is not only an excellent source of vitamin A, folic acid, calcium, vitamin C, and fiber, but it can also be quite delicious.

The meatball recipe, while a bit time consuming, is our version of a recipe we fell in love with at an Asheville restaurant. After a number of attempts and a little help from Paula Wolfert (The Slow Mediterranean Kitchen, 2003), we feel we have finally arrived at the tastes and textures of the original.
