'C' is for cookie
As the title says, today's column is all about cookies. The main focus will be on cookies for humans, but our Tibetan Terrier, Tashi, has agreed to provide a recipe for her very favorite treat, Tuna Bits, to share with the pets in your life. We would also like to mention a favorite tool that has become part of almost any baking project at our house, the Silpat. This popular mat contains a glass fiber weave to reinforce the silicone, and is used to provide a nonstick surface without having to use fat, or parchment paper. The mats have been around for at least ten years, come in a variety of sizes, and frequently are available for under $20.
The cookie recipes range from some we have been enjoying for years, to one that just made an appearance in the December issue of Bon Appetit - Ambrosia Macaroons. Not only are these cookies delicious, they are also very attractive. The recipe did not include any ideas on storage, but we have included our comments at the end of the recipe.
