Breakfast recipe ideas



Although a lot of people aren't particularly interested in breakfast, nutritionists encourage us to start each day with a small meal, and preferably one that is healthy. We recently tried the multi-grain waffle recipe (from the Eating Well web site), with some wonderful maple syrup we received from friends in Canada. This would make a great breakfast for family, or guests. The fruit crisp can be made a day or two ahead, and reheated in the microwave prior to serving with yogurt; the muffins can be frozen after baking, and reheated as needed. Finally, the muesli recipe is one we devised after enjoying this breakfast treat in various parts of Europe. The original version used full fat Half & Half, but we have lightened it considerably with the readily available fat-free product. And, in all of these recipes, Splenda's brown sugar blend can be substituted for the brown sugar to reduce calorie count, however, be sure to use the conversion chart on the package. While muesli will never be considered an "attractive" breakfast dish it (along with the other recipes in today's column) offers a lot of taste, whole grains, and very little in the way of fat.
